Seafood is the original “fast food.” Whether you’re dealing with fish or a multitude of shellfish, cooking time is usually short.
I’m a big fan of cod. I love the fresh fillets and always keep a supply of frozen cod on hand. I even enjoy salted cod, called bacalao, that is a treasured ingredient in Portugal and parts of Spain.
This recipe illustrates how just two ingredients can create a very tasty meal.
Cod fillets are available fresh at the seafood counters of most grocery stores and is always available frozen.
The prosciutto wrapped around the fish gives it added flavour. Domestic varieties of prosciutto are readily available in grocery stores, alongside the imported ones. I recommend the domestic since it’s more economical.
Serve this simple dish alongside your favourite seasonal vegetable and perhaps some rice or garlic mashed potatoes.
Proscuitto Wrapped Cod
(Serves 4)
4 skinless cod fillets (about 7 oz. each )
Freshly cracked pepper
4 slices prosciutto
1 tsp. (5 ml) olive oil
Lemon wedges for serving
Directions:
1. Pat the fillets dry with paper towels. Season the fillets lightly with pepper.
2. Wrap each piece of fish with the prosciutto.
3. Preheat oven to 400F. (200C)
4. Heat oil in an ovenproof skillet large enough to hold all the pieces of fish.
5. Over medium-high heat, add the fish and cook on one side until the prosciutto is lightly browned (about 2 minutes).
6. Flip over and place the skillet in the oven for 8-10 minutes.
7. Serve with lemon wedges.
